Ha ha! Don't you just love spoilers. Warning, this post has spoilers concerning the extended footage on the Fellowship DVD being released in November.
Thanks to my sources, I have discovered some info about what we can expect to see in the special edition DVD.
~ Extended footage of scenes in Shire including Pippin singing, Bilbo writing in the red book, and Frodo and Sam watching the Elves traveling to the Grey Havens.
~ Aragorn's history will be have a little more light shed on it including a scene where Aragorn visits his mother's grave in Rivendell. Aragorn will also sing in Elvish during some point.
~ The council of Elrond will be extended in the fact that Gandalf will speak the dark words of Mordor that are written on the ring and he will confront Boromir.
~ There will be a scene when the Fellowship leaves Rivendell. They will be sent off by Elrond, Arwen, and a group of elves.
~ The sequence in Moria with the cave troll will be a bit longer including a part where Aragorn saves Boromir's life.
~ Loth Lorien will have much more footage including Haldir's complaints about Gimli, more scenes with Celeborn, and the famous giving of the gifts. (Yes!)
~ The battle scene with Lurtz will have a little more gore in it including a part with Lurtz pulling a dagger out of his body and licking the blood from it. (Ewwww! Why add that in of all things!)
Anyway, these are only rumors that I cannot personally confirm, but it gives us some cool things to hope for and look forward too.
Heard anything else? Post it!

That's neat. I heard that there was a lot of music in the movie that wasn't on the soundtrack. Maybe they will produce an extended soundtrack later on.

I just read off of www.lordoftherings.net that the DVD will include a 10 minute preview to The Two Towers and a preview to a Two Towers video game. It will also include web links to some exclusive online stuff!

LOL. If I understand correctly, those aren't rumours at all and were listed by Empire Magazine, who saw the Extended version with cast before leaving New Zealand. Here it is:

...which leads one to wonder why it is that Jackson needed to comission Howard Shore to compose all new music for the "Credit Scroll" of the Charter Member names, causing it to be left off the Theatrical Release version of the DVD...I mean, with all the extra music one would think there would be enough music to score that part of the DVD...

Hmmm. I do remember reading that they were from empire magazine, but the truth be told some of the things on the list have been bouncing around for a couple of months now and so they might be true and they might not. Although I suppose if they have already been published in a magazine then they must be true.

Yeah that is too bad, zeldamaster13. But believe me, if they had ever filmed stuff for Bombadil, I think someone would have known about it by now.

I believe Ariana was refering to music that was in the movie and not on the soundtrack that was sold (i.e. "Original Motion Picture Soundtrack" cd) (as opposed to what maybe you thought she meant: music recorded but not appearing on the movie?)
In case you did understand her point I don't know why you'd ask that question but I will say this: Unlike many scores FoTR didn't seem to track anything in, every part of the score seemed to be a unique recording. The music that is heard was written directly for that scene at every point. Thus, in keeping with that I guess it makes sense to record something new for the extended credits rather than track in other music.

He will sing the Ballad of Beren & Luthien if I'm not mistaken - while the Hobbits sleep I've heard? When? I thought I heard 'on Weathertop' but Aragorn takes off by himself as soon as they reach Weathertop (or at least before a sleeping would take place). Could it be before Weathertop? We've seen still shots of them trudging through the Midgewater Marshes - will this be part of it? OR is it after Weathertop - under the stone trolls perhaps? With Frodo's injury it doesn't seem like the time for singing...who knows?
~ The council of Elrond will be extended in the fact that Gandalf will speak the dark words of Mordor that are written on the ring and he will confront Boromir.
"It must be destroyed!" as we've seen/heard Gandalf say at the CoE in all the TV commercials before FoTR came out. Also, it's good that Boromir gets a better rebuking about using the Ring than the short exchange between him and Aragorn (which was more of an argument about the throne of Gondor than about using the Ring).
~ The sequence in Moria with the cave troll will be a bit longer including a part where Aragorn saves Boromir's life.
But not before Boromir gets the trolls chain wrapped around his arm and tossed 20 feet across the chamber (as seen in the footage on the DVD - see Flame_of_Anor's link) OUCH! That would be a significant injury! Dislocated arm at the very least!
~ Loth Lorien will have much more footage including Haldir's complaints about Gimli, more scenes with Celeborn, and the famous giving of the gifts. (Yes!)
Is it possible we'll also see the outdoor fight with the Moria orcs in/near Lothlorien we've seen so many little tiny snippets of in the trailers? (1- as the Fellowship is running into the woods Legolas stops and shoot at an unseen pursurer (trailer 2 - 2:20). 2 - The Fellowship in in the woods, Legolas is in the background aiming presumably at orcs and an arrow flies right through them - presumably from a Lothlorien Elf shooter (trailer 1 - 1:57), 3 - that short shot of the Moria orcs outside in the sunlight that we've seen so many times (internet preview - :58.))
Also - looks like the Disaster of the Gladden Fields will be shown in a little more detail -- there is a shot in that Extended DVD preview of Isildur putting on the Ring and disappearing while fighting goes on in the background. I like that! I felt this scene was provocatively done but just too shorthanded to explain what had actually happened (i.e. Ring falling off and exposing Isildur).

I was hoping they would have a little bit more to say about the reforging of the sword. They totally passed over the significance of that IMO.

I was hoping for a very long extra scene with Tom Bombadil, but i guess it turns out they didn't even plan on ever having that scene. Oh well, can't wait for the special edition dvd.

but those would be an awesome 30 minutes!!!! Bombadil was awesome in the books!!
If nothing else, it'd be kewl to be able to see him just walking through the background...

I like Bombadil, but trust me, he just wouldn't have worked in the movie. He shows up for a chapter, does not have a drastic effect on the main story-line, except for saving the Hobbits' lives, and then is almost never heard from again. For a movie to be coherent, you can't have characters like that.

Maybe this is what you're refering to, but I read a PJ quote somewhere that the closest they ever came to trying to include TB was to have the Hobbits see just his hat as he walked along among some trees and hear his distant singing and have the Hobbits run off spooked.
