Throughout the book several dwarves could be seen in many familiar places shown during the movie. First off when Bilbo was packing his things to leave for Rivendell two or three dwarves were helping him pack. Also dwarves were seen crossing through the shire to the blue mountains. Also in the Prancing Pony there several dwarfs in there drinking ale and laughing having a good time. Why would Peter Jackson exclude all the dwarves?

To simplify things like he did many times - he excluded a big character like Tom Bombadil so why not toss away a few unimportant dwarves?
I think that's a pity too!

They are mentioned in passing, during the scene at the Green Dragon. The Gaffer, or another hobbit perhaps, says that Dwarfs can be seen crossing the Shire, "and others of a less saviry nature".

I would have prefered more Dwarves present in the movie as well, they are my favorite!!!
